The poblano is a popular Mexican chili pepper. They are peppers extremely mild in terms of heat, quite large and are somewhat heart-shaped. Their outer walls are thick, making them perfect for stuffing and baking. They are often roasted and peeled when cooking with them, or dried. When dried and smoked, they are called ancho chilis.
The pods are very dark green, ripening to dark red or brown. They are usually picked when green and are very multi-purpose when used for cooking. For those who do not like the flavor of bell peppers, this is likely the best substitute in any recipe that calls for green bell peppers.
Poblanos are from Puebla, Mexico. This plant is can reach up to 25 inches high. The pods grow 3-6 inches long and 2-3 inches wide.
